Healthy Food Concept

At Charlottehaven, we have thought about what constitutes a healthy diet. Our choice of raw ingredients and how they are combined reflects these considerations. For example, 80 per cent of our raw ingredients are Danish, which goes hand in hand with high quality and a good flavour. Our cuisine is “raw”, i.e. we prepare the food minimally, thereby preserving vitamins and minerals to the greatest possible extent. Only fresh herbs and spices are used such as chilli, ginger, coriander, lime, horseradish, onion, garlic, salt and pepper as well as oils, vinegars and marinades. This is to achieve the best flavours and to avoid unnecessary additives.

Dishes are normally accompanied by bread or potatoes. We bake our own bread using sourdough, which is allowed to rise slowly to enhance the bread flavour and to increase the number of healthy lactic acid bacteria. We use four different grain types in our bread making: wheat, spelt, rye and durum. We serve Danish potatoes, salads and vegetables throughout the entire season.

Fats are important for our bodies to function, and therefore the choice of oils and fats is also important. For roasting and frying we use olive oil and rapeseed oil, and we sprinkle almonds, nuts or seeds over most of our dishes to achieve the right balance of essential fats. Bottles of Bornholm rapeseed oil, Lehnsgaard stand on the tables, an oil which – when mixed with Balsamico – offers a healthy and delicious alternative to butter. We have decided to use organic dairy products as their fat composition is healthier than in conventional milk.

Protein is – like fat – an important ingredient of healthy eating. Our menu offers a good choice of Prosciutto, fish, chicken and beef. The meat is tender to keep the amount of animal fat to a minimum.

Healthy food depends on quality, preparation and balance in the meal. To achieve the right balance in a meal, it is important that accompaniments such as bread and potatoes as well as vegetables, fats and proteins are all represented. All our dishes take account of this.
